Taco Stuffed Sweet Potatoes

One of my all time favorite recipes!!
I love this recipe for so many reasons - The variety of fiber and veggies in this meal is something your gut thrives off of. The flavor is totally unmatched and perfect to switch up a boring week night meal. Its so quick and easy and only requires some time in the oven but little effort in the kitchen! Oh, AND it can be great for meal prep to have balanced, nourishing lunches already prepared for your week OR a quick dinner that will be a crowd pleaser and a hit with the whole family.
Healthy eating doesn't have to be complicated.
Add this recipe into your weekly line up and see how easy and delicious meals made at home can be!

INGREDIENTS:
3-5 sweet potatoes
1 lb. ground turkey, cooked
1 can black beans
1/2 bag organic corn
tomato, diced
avocado
cilantro
your favorite salsa
cheese (optional)
salt and pepper
red pepper flakes
cayenne pepper
DIRECTIONS:
Preheat oven to 425 degrees F.
While oven is preheating prepare sweet potatoes by stabbing them with a fork all over and placing them on a baking sheet with water covering the bottom.
Bake sweet potatoes for 45-60 minutes depending on how large the sweet potatoes are. When the sweet potatoes can be cut through the middle easily, they are finished.
While sweet potatoes are cooking cook turkey in a skillet seasoning with salt and pepper.
In another pan, cook the frozen corn and black beans together. If you like a little heat, add a sprinkle of cayenne pepper and 1/2 tsp red pepper flakes.
Once corn is starting to brown add turkey and corn and black bean mixture to the same pan and combine evenly.
When sweet potatoes are finished cooking, cut them in half but not all the way through. push the ends together to make room for the stuffing.
Add the stuffing (turkey, corn and black beans) warm in oven for a few minutes if needed.
Pour salsa over top and top with remaining toppings then serve!

Most of the time, what I use is brass. It's what they call white brass, which basically means that there's a lot of zinc in it. It link comes off as a much whiter metal. I could use silver but silver tends to be on the white side, whereas this white brass has a tendency to be a bit link darker, so it kind of matches stainless steel a little bit better. If it's link a gold watch, then I often use brass.
