I feel like I overdid it with the banana bread in 2020. SO, I switched it up and made some BANANA SNACKING BREAD.
And, it turned out incredible.
Thick, moist and a such delicious treat for breakfast, mid day snack or a night cap. Did I mention its vegan AND gluten free?!
You can really customize this recipe to what you might have on hand or to what you like. For example, you can use regular butter OR vegan. I use applesauce to make this recipe vegan (without the eggs) but you can just sub the applesauce with two eggs if you don't want it to be vegan, or don't have applesauce on hand.
I recommend brown sugar but you could probably try coconut for the recipe instead. I used a gluten free baking powder but you can use regular flour! The gluten free flour I used is 1:1 :).
If you want, feel free to add 1/4 cup of nuts or chocolate chips! Most of my recipes are easy and customizable like this to fit each individuals needs!
1 stick butter, melted and cooled (vegan or regular will work)
1 cup packed brown sugar
1/2 cup applesauce (or two eggs)
2 tsp vanilla extract
4 ripe bananas, mashed
1 3/4 cups @bobsredmill GF all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 cup coconut sugar
Preheat oven to 350 degrees and line a 9” baking dish with parchment paper.
Mix together the butter, brown sugar, applesauce (or eggs), and vanilla until combined. Mix in the bananas until combined.
Add in the flour, baking soda, cinnamon and salt and mix until everything is evenly combined.
You can add nuts or chocolate chips if desired (I didn’t)
Pour the batter into the prepared pan. Sprinkle the coconut sugar evenly over the top.
Bake for 45-50 minutes or until a toothpick comes out clean when inserted into the center. Let the bread cool slightly in the pan on a rack. Cut into squares to serve. DELISH!!
