Trying to get creative with pumpkin! we've already got pumpkin brownies, cookies and blondies and pumpkin truffles and now we have PUMPKIN BREAD. The best thing to enjoy with coffee or let's be honest, ANY TIME.
This bread is so easy to make you only need one bowl and the ingredients below! It comes out moist and squishy and will make your house smell like heaven. I added 1/2 cup white chocolate chips to the top but they burnt during cooking. Still delicious but maybe try adding them in the batter! They turned out like a hardened caramel frosting layer and I wasn't mad about it! See how easy this is below and tag me on Instagram if you make! :)
INGREDIENTS:
1 cup pumpkin puree
2 eggs
6 tablespoons coconut oil
½ cup maple syrup
¼ cup almond milk
1 ½ cup @bobsredmill GF 1:1 baking flour (I use Bobs for all of my baking needs! They have every flour you can think of) Shop HERE
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons cinnamon
1 teaspoon allspice (or pumpkin spice)
1 teaspoon ground nutmeg
¼ teaspoon ground cloves
DIRECTIONS:
Preheat oven to 350.
Whisk wet ingredients in a large bowl until fully combined. (pumpkin, maple syrup, coconut oil, eggs, milk, vanilla)
Add in the baking soda, baking powder and salt and whisk until well combined.
Add the cinnamon, allspice, nutmeg, and cloves, and whisk until well combined.
Then, Add the flour and mix until a cake batter consistency has formed.
Pour batter into a parchment lined bread pan.
Bake for 45-60 minutes or until a toothpick comes out just clean.
Let cool before slicing or serving.
