These mouthwatering, sink your teeth in Key Lime Pie Bars. š
They are vegan, gluten free and no baking required!!!
I never liked key lime pie growing up until I went to Key West and was forced to try a Key Lime Pie. I can tell you that key lime pie was the best Iāve EVER had. And Iāve heard key limes have something to do with it!
Conclusion: Key lime flavor is extremely underrated and I recommend Key Limes for this recipe! š(Regular limes will still do the trick) ā£
INGREDIENTS:
Filling:ā£
1 cup raw cashews (boil and soak for at least one hour, or soak overnight)ā£
1 cup coconut cream (full fat) ā£
2 tbsp tapioca flour ā£
1/2 cup key lime juice ā£
Lime zest from 1-2 limesā£
1/4 cup maple syrup ā£
Pinch of sea salt ā£

Crust:ā£
1 cup oatsā£
1 cup almonds (any nuts would work)ā£
1 1/2 Tbsp coconut sugarā£
3-4 Tbsp coconut oil (melted)ā£

DIRECTIONS:
Preheat oven to 350.ā£
In a food processor, blend together all crust ingredients except coconut oil. ā£
Once mixture is combined. Add melted coconut oil, starting with 3 Tbsp (add more if it's too dry.)ā£
Pulse in food processor until a loose dough is formed. ā£
Press the crust mix into a parchment lined 8x8 pan. ā£
Bake fro 10 minutes. ā£
While baking, make the filling. ā£
Blend all filling ingredients inside a food processor or blender until you have a liquid consistency. ā£ā£
Pour over crust and place in fridge until set. ā£can also place in freezer for a faster set but this might make the curst harden a bit. ā£
Top with more lime zest and sliced limes ā£and ENJOY!
