When life is bananas make it muffins 🍌🧁
question - who has YET to make something with bananas since quarantine?! IF there’s anyone left out there, I GOT YOU.
Gluten Free. Moist. Refund Sugar Free. Delicious.
INGREDIENTS:
1 cup mashed banana (about 3)
4 eggs
1/4 cup @lakanto maple syrup (can use maple syrup or honey)
1 tbsp Apple Cider Vinegar
1/2 cup coconut floudr
1/4 cup tapioca flour
1 tsp cinnamon
1 tbsp @shopkarenberrios maca powder
Dash of salt
2 tsp baking powder
1/2 tsp baking soda
Chocolate chips (optional)
Nuts (optional)
DIRECTIONS:
Preheat oven to 350.
Spray muffin tin with nonstick spray or use muffin cups.
Mix together all wet ingredients in a medium sized bowl until smooth texture.
Add the dry ingredients and stir until a batter forms.
Allow the batter to sit for 5 or so minutes to rise.
You can mix in the nuts/chocolcate chips - I just topped them!
Fill each muffin cup almost full and top with chocolate chips and walnuts or your favorite toppings!
Cook for 25-27 mixtures or until toothpick comes out clean.
Let sit until cool!!
