Maca Chocolate Chip Banana Muffins

question - who has YET to make something with bananas since quarantine?! IF thereās anyone left out there, I GOT YOU. ā£

Gluten Free. Moist. Refund Sugar Free. Delicious. ā£

INGREDIENTS:
1 cup mashed banana (about 3) ā£
4 eggs ā£
1/4 cup @lakanto maple syrup ā£(can use maple syrup or honey)
1 tbsp Apple Cider Vinegar ā£
1/2 cup coconut floudr
1/4 cup tapioca flourā£
1 tsp cinnamon ā£
1 tbsp @shopkarenberrios maca powder ā£
Dash of salt ā£
2 tsp baking powderā£
1/2 tsp baking sodaā£
Chocolate chips (optional)ā£
Nuts (optional)ā£

DIRECTIONS:
Preheat oven to 350.
Spray muffin tin with nonstick spray or use muffin cups. ā£
Mix together all wet ingredients in a medium sized bowl until smooth texture.
Add the dry ingredients and stir until a batter forms.
Allow the batter to sit for 5 or so minutes to rise.
You can mix in the nuts/chocolcate chips - I just topped them!
Fill each muffin cup almost full and top with chocolate chips and walnuts or your favorite toppings!
Cook for 25-27 mixtures or until toothpick comes out clean.
Let sit until cool!!
