Paleo Banana Cookies

Sometimes, a batch of cookies is just what you need to feel better. Sometimes, cookies might fuel you more than a salad or a green juice. Sometimes, you might eat the half the batch and that’s ok.
Yesterday I didn’t know what I needed and then I found out it was cookies. Made these dreamy banana cookies and all my problems seemed smaller after that first bite. 🤤

Sometimes, you really do just need a cookie.

INGREDIENTS:
2 brown bananas
1/2 cup almond butter
2 tsp vanilla extract
1/4 cup coconut sugar
6 tbsp tapioca flour
6 tbsp coconut flour
1/2 tsp baking soda
1/2 tsp cinnamon
2 scoops @ancientnutrition collagen (optional)
Dark chocolate bar (optional)
DIRECTIONS:
In a bowl mash bananas. Then add in 1/2 cup runny almond butter - mix. Add 2 tsp vanilla extract, 1/4 cup coconut sugar - mix. Add 6tbsp tapioca flour, 6 tbsp coconut flour and 1/2 tsp baking soda. Stir until you have a thick but slightly wet batter. Using a large cookie scoop, scoop out 9 even sized cookies onto a parchment paper lined baking tray. Bake at 350F for 12 minutes - half way in pull out cookies and gently flatten with the bottom of a water or wine glass.
Remove from the oven and let cool slightly before drizzling over some melted dark chocolate with a fork (I used 1/4 @lilys_sweets dark chocolate bars) Store any leftovers in the fridge. If you have any 😋😋
