Raw Vegan Dream Bars

Almost too pretty to eat dream bars 💫💙🌈🍋

These raw, vegan bars are sooo easy to make and only require a few ingredients! They are lemon flavored and I added the blue spirulina for color, it doesn't have any flavor. But it does contain a lot of health benefits!


Blue Spirulina is full of vitamins, minerals and antioxidants. It is said to help lower cholesterol, improve immunity, provide energy from its B vitamins, reduce inflammation, reduce allergy symptoms AND (for my vegans) it is a plant based complete protein which means it contains all 9 essential acids for your body to build muscle. Not all essential acids can be made by our bodies and most come from animal sources so its very important for vegans to make sure they're getting adequate complete proteins!


Green spirulina is the algae in the most basic form. To get the blue color phycocyanin is extracted from the algae making it the purest form of phycocyanin with a rich blue color. The phycocyanin is the number one active ingredient in algae that provides antioxidant support. Some say this can help with fighting cancer, anemia and vascular disease.


This wonderful superfood isn't only beneficial to your health but its also beautifully vibrant and can dress up so many dishes with its deep blue sea color. I love adding it to smoothies and lattes and vegan desserts. It also contains 4 grams of protein per tbsp which is a win if you ask me!

INGREDIENTS:


base: ⁣

2 cups pitted dates

2 cups raw unsalted cashews

1/2 teaspoon sea salt

filling: ⁣

2 cups cashews (soaked for 2 hours in hot water) ⁣

3/4 can coconut cream ⁣

1 large size lemon, juiced (about 1/4 cup)⁣

2-4 tbsp maple syrup ⁣

1-2 tsp blue spirulina ⁣(I used @fromthereserve)


DIRECTIONS:


First, you will want to make sure to soak the 2 cups of cashews for the filling in water, overnight. if you cannot do it overnight soak for a minimum of 3 hours or boil until soft.

To start, mix all the base ingredients in a food processor until crumbly

Once fully combined, press mixture down into an 8x8 parchment lined baking dish.

Set aside. ⁣

In a food processor or blender mix all the filling ingredients (except spirulina ).⁣

Once fully mixed with no cashew chunks, pour 3/4 of the filling onto the crust. ⁣

Add 1 tsp blue spirulina to the rest of the filling, mix and pour it on top. ⁣

Sprinkle the other 1 tsp blue spirulina on top and blend it using a knife or fork⁣.

Freeze until set (at least 2.5 hours)⁣ or refrigerate for 24 hours.

Store in fridge for up to a week.
