Breakfast Sandwiches (egg McMuffin style)





The easiest breakfast meal prep, ever! These breakfast sandwiches only require a few ingredients and a few minutes to throw together!


You can use your favorite English muffins, mine are Killer Daves or a local sourdough from La Grande Orange. (a must try if you're in AZ!). I have used different lunch meats for this sandwich and sausage patties. my husband and I are in a debate, he loves the patties and I love the lunch meat. (I'm laughing saying that aloud in my head). Our favorite way to have this is with a Mexican blend of cheese, the cheese gives the sandwich so much flavor! Raw cheddar slices are good too (and not as messy).


Save this recipe for an easy meal prep for college students, families, lunches for work and even lunch for work from home! Tip for the eggs: cook them until they are nearly fully cooked because you will only warm the cheese at the end. The cook time varies depending on the amount of eggs and milk/water you use. you can use more or less eggs to your liking. we like 7-8.




INGREDIENTS:


🥐 your fave english muffins (4-5)

🥚 8 eggs

🥚 2-4 tbsp milk

🥓 choice of lunch meat

🧀 shredded organic Mexican cheese blend (or any really)

🧈 3+ tbsp butter (optional but recommended)


DIRECTIONS:


  1. preheat the oven to 350 and mix eggs in a bowl with 2-4 tbsp water or milk and salt and pepper.

  2. Bake eggs in a greased donut pan or 8x8 dish for 12-15 minutes.

  3. While eggs are baking, spread english muffins (inside up) on a parchment lined baking sheet.

  4. Top each muffin bottom (only) with a small slice of 1/2 tbsp butter.

  5. Then top each muffin with lunch meat (1-2 pieces).

  6. Once eggs are done, cut into even squares if baked in dish and top over lunch meat.

  7. Then add a generous amount of cheese and stack muffin top on top of sandwich to bake.

  8. Bake for another 3-5 minutes (less if you are prepping them and will warm up in the microwave, more if you are serving immediately).

  9. Wrap each sandwich in aluminum foil and store in fridge.

  10. Warm up in the microwave or oven when ready to eat.
