This healthy quesadilla recipe is so easy I don't know if I'd even call it a recipe! You can customize it anyway you'd like. Make it for breakfast and add some eggs and sausage. Or add a bunch of veggies or make it vegan with jackfruit and vegan cheese. The options are endless!
I love a simple little quesadilla with chicken, spinach and melty cheese that comes out in each bite. So thats just what I made! So how easy this no recipe, recipe is below and keep in mind you can literally add or take away whatever ingredients you want! Thats the best part of cooking, making meals your own and adding ingredients to them that YOU love.
INGREDIENTS: (that I used)
2 Angelic Bakehouse Sprouted Grain Tortillas
1 cup shredded chicken
one large, heaping handful of spinach
1/4 cup vegan mozzarella cheese
Sprinkle of organic Mexican cheese blend
Avocado
Tomatoes
Cilantro
Salsa for dipping
DIRECTIONS:
First, start by satueeing your spinach and any other veggies you are using.
Once wilted a little bit, add in the shredded chicken to warm.
Once those are cooked, clean the pan or use a different one and place the stove on medium heat while prepping the pan with avocado oil.
Place one tortilla into the pan.
Top with chicken and spinach mixture.
Sprinkle cheese over the mixture.
Top with the other tortilla.
Cook for 5 minutes and flip for another 5 minutes.
Serve immediately and top with avocado, tomato and cilantro is desired.
