VANILLA PROTEIN DONUTS WITH MATCHA COLLAGEN ICING
Yes you read that right! These donuts are gluten free, full of protein and absolutely delicious!!! I made them at home with just a few simple ingredients in my donut pans which you can find here.
They take only a few munyites to mix together and then throw them in the oven and done! Don't forget to make sure you soak your cashews for the frosting before hand. They need to soak for at least 3 hours in water. You can also soak them over night. If you're not good at reading directions, like me ;) then you can boil the cashews for about 10-12 minutes and that should work too. The frosting just might be a little chunkier and not as creamy but I'm sure it will still taste great!
INGREDIENTS:
1/2 cup almond flour
1/2 cup vanilla protein powder
1 tsp baking powder
1/4 cup almond milk
1/4 cup coconut sugar
1 egg
1 tbsp coconut oil (melted)
DIRECTIONS:
Preheat oven to 350 degrees and grease donut pan with coconut oil.
Mix all the ingredients in bowl, add to donut pan and cook for 15 minutes.
To make the icing:
1 cup cashews (soaked for at least 3 hours or overnight)
1 scoop @vitalproteins Matcha collagen
1/4 cup @lakantosweetener maple syrup (or regular maple syrup)
3 tablespoons coconut oil (melted)
1 tsp vanilla
5 tbsp almond milk
Add everything to a blender and blend until creamy
Let donuts cool for 15-20 minutes and then ice them.
Top with hemp seeds if desired but not necessary.
