Pumpkin French Toast

October is here and its officially spooky szn. Which means all the pumpkin recipes! Woke up craving something different for breakfast so I whipped up some healthy protein filled pumpkin French toast and it did not disappoint! This recipe i’s going to be a fall staple over here 🍁

This recipe is super easy with minimal ingredients and full of protein with eggs and protein powder! The perfect post workout fuel or fuel to get you through your day. The pumpkin and maple syrup flavors go together so well and the toast pretty much melts in your mouth.
French Toast really isn't the hard to make so don't be intimidated! All you have to do is whisk some ingredients together and cook the break in a skillet flipping once or twice and a delicious, drool worthy breakfast is served!

INGREDIENTS:
2-4 pieces toast (I used @traderjoes sourdough)
2 pasture raised eggs (@vitalfarms)
1/2 cup coconut milk
1 tbsp coconut sugar
1 scoop @ancientnutrition pumpkin protein
1 tsp pumpkin pie spice
1/2 tsp vanilla
Butter, banana and maple syrup for toppings ✨
DIRECTIONS:
Add all ingredients (minus toppings) to a shallow bowl and whisk until combined. Heat a pan with butter or oil over the stove. Once heated dip both sides of toast in liquid mixture and cook until both sides are browned or to your liking (3-6 minutes per side). Top with your favorite toppings and serve! 😋
