Sweet Potato BBQ Chicken Sliders 🔥

These sliders are the best appetizer for any occasion. Sometimes I'll make them for lunch or as an appetizer for when friends are over or for tailgate season!!!
Who doesn't love finger foods during sporting events?!
BBQ chicken and sweet potatoes are some of my favorite foods. Combined, they taste absolutely amazing. Plus, they're SO easy to make! You only need 3 ingredients!
I used organic chicken and BBQ sauce. My favorite BBQ is Primal Kitchen which is paleo and whole 30 friendly and tastes delicious. Then, I used japenese sweet potatoes because they're my favorite. You could really use any form of sweet potatoes to make this recipe work!
The Instant Pot makes it so easy to cook and shred chicken in record timing. I used it to make this chicken but you can really cook it any way you'd like and shred it once its cooked :). It's also a personal preference to keep the skins on but you can totally remove the skins first!

INGREDIENTS:
1 lb. Chicken
1-2 Sweet Potatoes, washed and cut in circles.
1/2 jar @primalkitchenfoods BBQ sauce
Cilantro for garnish (optional)
DIRECTIONS:
Preheat oven to 425.
Prep chicken in the instant pot (or with preferred method of cooking).
If using the instant pot, place chicken in with 2 tbsp of water and the BBQ sauce.
Pressure cook for 12 minutes and then immediately release.
Shred chicken (I like to use my handheld mixer and keep the chicken in the instant pot to shred. Takes about 30 seconds!
While chicken is cooking, cut sweet potatoes into circles
Place on baking sheet and drizzle with oil or spray oil (I use @chosenfoods)
Bake for 10-12 minutes, flip halfway
Once everything is finished cooking, top sweet potatoes with shredded chicken and garnish if desired! Can also garnish with extra salt and pepper and chive cream cheese (don't knock it till you try it!)
