Spicy Chinese Chicken Lettuce Cups


Need meal prep ideas? Or just want to switch it up? I gotchu 😏 these lettuce cups are FULL OF FLAVOR and so easy to make, they'll be on the table in no time!


INGREDIENTS:

1 lb. ground chicken ⁣

1 cup thinly sliced brussles ⁣

1 cup sliced carrots⁣

1/2 cup cashews ⁣

2 tablespoons amino acids (or more if desired) ⁣

1 tablespoon rice wine vinegar⁣

1 teaspoon ground ginger⁣

2 teaspoons red pepper flakes (or more if desired)⁣

1 shallot, chopped⁣

1 garlic clove, minced ⁣

generous amount of salt and cracked pepper ⁣

Sesame seeds to top ⁣


DIRECTIONS:

Cook ground chicken in sesame oil (or any but sesame will enhance the flavor).⁣


In a different pan cook shallot, carrots, brussles and cashews with 1-2 tbsp amino acids. ⁣


Once everything is cooked through, add to the same pan. ⁣


Season with all other ingredients and combine evenly.

Let simmer with lid on for 2-4 minutes on low heat.

Add mixture on top of rice or in lettuce cups or butter lettuce. Lettuce cups make for the perfect CRUNCH
