1 lb. ground chicken
1 cup thinly sliced brussles
1 cup sliced carrots
1/2 cup cashews
2 tablespoons amino acids (or more if desired)
1 tablespoon rice wine vinegar
1 teaspoon ground ginger
2 teaspoons red pepper flakes (or more if desired)
1 shallot, chopped
1 garlic clove, minced
generous amount of salt and cracked pepper
Sesame seeds to top
Cook ground chicken in sesame oil (or any but sesame will enhance the flavor).
In a different pan cook shallot, carrots, brussles and cashews with 1-2 tbsp amino acids.
Once everything is cooked through, add to the same pan.
Season with all other ingredients and combine evenly.
Let simmer with lid on for 2-4 minutes on low heat.
Add mixture on top of rice or in lettuce cups or butter lettuce. Lettuce cups make for the perfect CRUNCH
