Creamy Tuscan Chicken Pasta



You'll love this creamy tuscan chicken pasta because it is full of flavor and so easy to throw together. This recipe isn't complicated at all and you can really use one pan! This pasta dish is ideal for easy week night recipes that the whole family will love! The rich creamy parmesan and tuscan flavors of sun dried tomato are the perfect combination.


I used banza chickpea pasta for this pasta recipe but you can use any pasta you'd like! I don't recommend subbing the heavy cream for anything else as it really sets the texture and flavor of this pasta dish. Feel free to add in whatever veggies you like if you're not keen on the ones added here. just don't forget the dried tomato! If you don't like dried tomato, try fresh chopped ones for a fresher flavor. This tuscan pasta has a creamy sauce that thickens up after cooking but if you want it thicker just add 1/2 tbsp of arrowroot flour to the dish, mix and let simmer before serving to thicken the sauce.





INGREDIENTS:

  • 1.5 lbs chicken breasts, cut into small pieces

  • 1 box pasta, cooked according to package

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1 tsp Italian seasoning

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 2 garlic cloves

  • 1 tsp red pepper flakes

  • Avocado oil or grass fed butter for cooking

  • Salt and pepper to taste

  • 1/4 cup sun-dried tomatoes

  • 1/4 cup mushrooms

  • 1/2 cup chopped asparagus

  • 2 cups spinach

  • 1.5 cups organic heavy cream

  • 1 cup grated parmesan cheese


DIRECTIONS:

  • Cook pasta according to box.

  • Add butter or oil to a skillet and heat to medium heat. Add in garlic, minced and chicken.

  • Season chicken with all seasoning and stir and cover for 2-3 minutes.

  • Continue turning chicken until all sides are browned.

  • Remove chicken from skillet and add in sun dried tomatoes, mushrooms and asparagus. Sauté for 3-4 minutes.

  • Next, add the heavy cream, salt, and pepper to taste, and bring to a boil.

  • Once boiling, add the Parmesan cheese and stir until the sauce has thickened slightly.

  • Turn the stove to low heat, add the chicken, spinach and pasta into the skillet and stir and cover.

  • Let simmer for 5 minutes on low and then serve!
