Honey Dijon Baked Chicken

Mix up your weekly dinner line up with this easy and flavorful baked chicken dish. This honey dijon baked chicken was the perfect flavorful meal that the whole family enjoyed! Made enough for meal prep lunches the next day which is always a win.


I paired the chicken with delicious oven baked sweet potatoes and roasted Brussel sprouts and it made for the perfect, balanced, tasty meal!


I used bone in, skin on chicken thighs for optimal flavor but you can use any chicken you like! It may not soak in the flavor as much if you use breasts or skinless thighs, FYI! If you do use skinless thighs, you can decrease the cooking time by 10 minutes because they will cook faster.



INGREDIENTS:

  • 2 lbs chicken thighs (I used bone in, skin on for optimal flavor)

  • Season generously with salt and pepper on both sides

Sauce

  • 2 tbsp olive oil

  • 1 tbsp dijon mustard 1 tbsp mustard

  • 2 tbsp honey (or maple syrup)

  • 6 cloves garlic minced

  • 1/2 tsp red pepper flakes




DIRECTIONS:

  • Preheat the oven to 425 F degrees.

  • Place the chicken thighs in a bowl and season them generously with salt and pepper.

  • Whisk all the sauce ingredients together in a small bowl.

  • Pour the sauce over the thighs and toss them well.

  • Transfer the chicken thighs to a 9×13 inch baking dish including any remaining sauce. (If you feel there isn’t enough sauce, double the batch of sauce and pour more over top)

  • Transfer the baking dish to the oven and bake for about 35 minutes or until the chicken thighs have an internal temperature of 165 F degrees and skin is crispy.

  • Cover chicken for 10 minutes and then serve with your favorite sides!

This sounds like a really easy dinner to throw together, and the honey-Dijon combination with all that garlic sounds especially good. I like that the recipe also works well for leftovers, since having something ready for lunch the next day is always a bonus. I’d definitely go with the bone-in, skin-on thighs for the extra flavor and crispy skin. chicken road

But even with more brands adopting ceramic, link the price point is commonly well into the four-digit range. What if you want some ceramic style, but link don't want to spend that much cash, especially on a material that might not be naturally suited link for hard wear and tear?
