Homemade Tomato Soup & Grilled Cheese

Is it just me or does this meal take you right back to childhood? Theres something nostalgic about grilled cheese and homemade tomato soup. I roasted the veggies for this tomato soup and it turned out so flavorful.
Tomato soup is so easy to make and perfect for these cooler months or a rainy day! I made this combo on a rainy gloomy day and the soup and grilled cheese made me feel so warm and cozy. It does take long to make this tomato soup and it definitely doesn't require too much effort! All you need is a few ingredients an oven and a blender!
If you wanted to spice up your soup you could add extra ingredients to the tomato soup to make it your own. try adding some spice or colored tomatoes. either way have fun with it! Cooking should something we enjoy. I hope you enjoy this delicious, easy tomato soup recipe below.
EASY MADE FROM SCRATCH ROASTED TOMATO SOUP & GRILLED CHEESE
INGREDIENTS:
6-8 tomatoes
1 yellow or white onion chopped in fourths
10-12 garlic cloves
1/4 cup olive oil
1 cup bone broth or veggie broth
1/4 cup heavy cream or milk
salt and pepper to taste
DIRECTIONS:

Preheat oven to 400
Add tomato’s, onion, garlic, olive oil & salt and pepper to a 9x13 dish.
Bake for 30-40 minutes
When finished roasting, add to blender with the rest of the ingredients and blend until smooth
Serve with grilled cheese or sandwich

Turn on the skillet to medium heat and add butter or oil
Butter one sides of two slices of bread
Once pan is warmed, add buttered side of bread down into the pan.
Top with 2 slices of you favorite cheese and add the other piece of bread on top of the cheese to form your sandwich
Cover the pan if you'd like for faster cooking and let cook on one side for 2-3 minutes.
Flip and cook on the other side.
Repeat until browned to your liking.
Cut and serve!
