Gluten Free Shrimp Scampi

Dreaming of a gourmet dinner, but finding time to cook it is where you get stuck? Try this super easy Gluten Free Shrimp Scampi. It looks so fancy and also tastes fancy, but is super quick and easy, only takes 15 minuets!

INGREDIENTS:
12 oz. linguine (I used gluten free brown rice noodles)
1 1/2 lbs extra large shrimp, peeled
1 cup chopped asparagus
3 tbsp extra virgin olive oil
4 tbsp unsalted butter
6 garlic cloves, minced
1/2 cup dry white wine
1 tsp red pepper flakes (or more for extra spice)
2 tbsp fresh lemon juice
1/4 cup chopped fresh parsley
Salt and freshly ground black pepper to taste (min 1 tsp each but more is recommended)

DIRECTIONS:
Cook linguine according to package instructions.
While pasta is cooking, melt the butter with olive oil in a 12-inch skillet over medium heat. Add garlic and sautƩ 1 - 2 minutes or until just lightly golden.
Add wine and simmer, about 2-3 minutes.
Next, add shrimp in an even layer and season with salt, pepper and red pepper flakes. Cook until shrimp turns pink, about 1-2 minutes, then add in asparagus and cover with the lid. Cook for 3-5 minutes stirring frequently.
Last, stir in lemon juice and parsley. Toss shrimp and sauce with pasta. Taste as you go, adding in more salt and pepper as needed. Serve immediately and ENJOY š¤š¼
