Gluten Free Chicken Tenders

The best homemade gluten free chicken tenders ever!!! Easy to make, season with anything you like and I promise you don't even have to tell the kids or hubby that they're healthy! This is my boyfriends top requested dinner.


As I always say, healthy eating doesn’t have to be boring. Nor does it have to be bland or restrictive. You can seriously make anything healthy, try me. ⁣

Are you afraid if you start eating healthy you’ll have to give up your favorite foods? Well don’t be sister because you don’t have to give up anything. Chocolate? I eat it every dang day. Mac and cheese, yup. Pizza, duh. I just find higher quality ingredients cook with so my body thanks me after! I love pairing mine with sweet potato fries or a salad. ⁣👇🏼💛

INGREDIENTS:


1lb. chicken breast (I buy the strips already cut)⁣

1.5 cups almond flour (I use @bobsredmill)⁣

1 egg white

3 tsp paprika ⁣

1-2 tsp cayenne (or more for extra 💥)⁣

2-3 tsp garlic powder⁣

2 tsp salt

1-2 tsp pepper

1-2 tsp Italian seasoning or dried parsley

⁣(for a cheesy flavor sometimes I add 1-2 tbsp nutritional yeast)

1/2 cup gluten free Panko Crumbs for an extra crunch! (optional)


*I recommend doubling the recipe for leftovers!



DIRECTIONS:


for oven

Preheat oven to 400⁣

Place flour and spices in a shallow bowl and combine mixture.⁣

Crack egg whites into a different shallow bowl.⁣

One by one place each tender in the egg white bowl until covered in egg white then dip each tender into the dry mixture until coated completely. ⁣

Place tenders on a baking sheet lined with parchment paper.⁣

Bake for 20 minutes, flipping at 10 min.


*You may need to bake for an additional 6-8 minutes depending on the size of your chicken and if you doubled the batch. the key is getting the crust a little browned!

*Usually I can cook in 20-22 minutes but this last batch I made took about 30.


for air fryer

Preheat air fryer to 400 so it's warm.

Place flour and spices in a shallow bowl and combine mixture.⁣

Crack egg whites into a different shallow bowl.⁣

One by one place each tender in the egg white bowl until covered in egg white then dip each tender into the dry mixture until coated completely. ⁣

Place tenders on a baking sheet lined with parchment paper.⁣

Bake for 20 minutes, flipping at 10 min.
